Every Sunday morning, while enjoying a warm cup of coffee, I turn on my TV to Paris Premiere and enjoy an entertaining series of shows about interior design, Interieurs, fashion design, La mode, La mode, la mode and finally french cuisine, Tres, tres bon.
Tres, tres bon is hosted by François-Régis Gaudry. What he basically does is go around Paris for 26 minutes to taste different restaurants, pastry shops, wine bars around Paris and evaluates them. Most of the time, he brings along an expert friend to get his/her opinion on the food or beverage. The first restaurant he visits is always sophisticated and quite expensive (bill can go up to 800 Euros), but he then offers a second option in the same neighborhood that’s good but much less expensive, like a bistro or a to-go sandwich.
Today, on May 12th, Gaudry visited a pastry shop called L’eclair de Genie that opened in November 2012: unlike other pastry shops in Paris, this one only sells eclair, a classic French pastry. The “eclair” is an oblong pastry made with choux dough filled with a cream and topped with icing.
The chef Christophe Adam previously worked for pastry masters Fauchon and Pierre Hermé. Being an admirer of these two pastry shops, I can clearly see the impact that they had on his current creations. Fauchon found an interesting way to present his eclairs: instead of boring flat icing, they would decorate it by printing pictures on them reflecting the name of the eclair or give it a three-dimensional effect:
Since the eclair is a classic, Adam had to find a twist to every flavor, even the most banal ones. Just take a look at the different options!
I must admit, they are expensive for eclairs (between 5.00 and 6.50 Euros). But they look worth it. Gaudry visited his eclair-expert friends and said that overall, it was refined and tasty. It is now the new item on my things-to-do in Paris.
Some interesting flavors that I would like to try out are:
Eclair Red Rasberry with milk/dark chocolate cream
Eclair Strawberry ganache, pistachio and strawberry gariguettes, the Fraisier
Eclair with tomato, mozzarella and basil (only on command)
